Blog Challenge Day 5:
Post Your Favorite Recipe

Food! That's right another post about food because what's better than food!?!?
This post obviously is my favorite recipe. Well one of them cause when you love food as much as i do there really isn't such a thing as "favorites". So enough with the chit chat here it is!

Grilled Greek Lemon Chicken

Yield: 4 servings

Ingredients

4 (6 oz) boneless skinless chicken breast halves
1/3 cup olive oil, plus more for brushing grill
1 Tbsp lemon zest
1/3 cup fresh lemon juice
4 cloves garlic, minced (1 1/2 Tbsp)
2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 tsp dried rosemary, crushed
Salt and freshly ground black pepper
Chopped fresh parsley, for serving

Directions

Using the flat side of a meat mallet, pound thicker parts of chicken to even thickness. In a small mixing bowl whisk together olive oil, lemon zest, lemon juice, garlic, oregano, basil, thyme, rosemary and season with salt and pepper (about 1 tsp salt 1/2 tsp pepper).
Place chicken in a gallon size resealable bag, pour in olive oil mixture. Seal bag while pressing air out. Rub marinade over chicken. Transfer to refrigerator and allow to marinate 2 - 5 hours (rotate bag and move chicken around halfway through if possible). Preheat grill over medium-high heat (to about 425 - 450).
Brush grill grates lightly with olive oil. Place chicken on grill, close lid, and grill about 4 minutes per side, or until chicken registers 160 - 165 degrees in center of chicken on an instant read thermometer. Let chicken rest 5 minutes, garnish with fresh parsley then serve immediately.

So, preheat your oven and get to work! This chicken is delicious and i hope you enjoy I know my family and I do!
Also, just in case you're not sure what to make with it, I usually pair it with some steamed broccoli, seasoned rice or seasoned green beans :)

Epilogue of Chaos

Blog Challenge Day 5: Post your favorite recipe!

This one is going to be one of my favorite post! Since we posted about what was in our fridge yesterday, I find it only fitting to fill you in on our favorite recipes! So, without further ado, 
Chicken Tortilla Soup!!

  • Chicken Tortilla Soup
  • Butter (6 tablespoons) 
  • Diced onions (half of a decent sized onion)
  • Flour (2 tablespoons)
  • Chicken stock (4 cups)
  • Water (4 cups)
  • Cream of chicken soup (1 large can)
  • Salsa (medium sized jar)
  • Fresh cilantro (chopped)
  • Shredded monterey jack or pepper jack cheese (2 cups)
  • Chicken breast (4 large boneless, skinless)
  • Half & Half (1 pint)


Melt 3 tablespoons of butter in a stock pot. Add diced onions and cook over medium heat until tender and transparent. Add another 3 tablespoons of butter. When melted, add 2 tablespoons of flour and combine well. Add 4 cups of water and 4 cups of chicken stock and turn heat up to medium/medium-high, stirring well to get flour mixture distributed through the liquid. Add 1 large can of cream of chicken soup, medium sized jar of salsa (hot or mild, your preference), some (a handful) of fresh chopped cilantro, and 1 pint of Half & Half. When good and hot, add 2 cups shredded monterey jack or pepper jack cheese, and COOKED shredded chicken
Serve with more shredded cheese, cilantro, and tortilla chips!
